Yes. EU Regulation 1169/2011 requires all food service establishments — restaurants, hotels, cafés, catering services, hospital kitchens and schools — to provide guests with accurate information on the presence of all 14 allergens in every dish served. The format may be written (menu, board, QR code) or verbal, but in that case a written source must be available to both the guest and the inspection authority.
EU regulation defines a minimum of 14 allergens, but HMS Allergen System also enables you to track other ingredients of interest — lactose, histamine, fructose, the FODMAP group, AIP-incompatible ingredients, and halal/kosher status. Everything is displayed on the menu and in the guest report.
Typically 2–3 weeks from signing to go-live — including recipe audit, allergen mapping, system configuration, staff training and the first menu review. For hotel groups with multiple properties, implementation is carried out in waves, averaging 1 property per week after the first pilot.
No. HMS Allergen System builds on the tools you already use. We have integrations with most Croatian POS systems and hotel management platforms, as well as an open API for all others. HACCP documentation is generated automatically and can be attached to your existing plan.
The chef simply updates the recipe in the system — all declarations, QR menus and tablet views are refreshed immediately. There is no need for reprinting or manual updates in five different places. The change is timestamped in the audit log, which is also valid for inspection purposes.
The sanitary inspection authority may impose fines ranging from several thousand to tens of thousands of euros, plus facility closure in more serious cases. The greater risk is civil liability — if a guest ends up in emergency care due to an undeclared allergen, the facility’s liability is almost automatic, and compensation amounts can reach six figures.
Yes. The QR menu is available in Croatian, English, German, Italian, Slovenian and Czech as standard — with the option to add other languages by agreement. Allergens and categories are translated automatically; dish descriptions can be entered manually or translated using the AI translation built into the system.
