Healthy cakes in kindergarten

On Saturday, December 9th, 2023, we held HMS Academy at Sisak Novi Kindergarten. Tema Akademije bila je: Healthy cakes in kindergarten, where the focus was on increasing the variety of cakes and presenting healthy and interesting cakes that are easy to prepare and suitable for use in kindergartens.
Chef Zoran Delić led the first part of the workshop, during which he, together with the cooks from Sisak Novi Kindergarten, prepared five different desserts that are not currently featured on the menu. The cooks divided into small groups and joyfully baked a cherry and semolina strudel with phyllo dough, millet pudding, banana bread, a cornmeal cake with millet and plum jam, and an oat pie with marmalade.

The goal was to try out various types of cakes using ingredients already available in the kitchen, and to adapt them to their kitchen setup (baking trays, convection oven), as well as to their cooking methods in order to optimize kitchen workflow. Great attention was given to the nutritional value of the cakes, as well as to their presentation and decoration.
During the cake tasting, the cooks and health coordinators Nikolina Sopić and Matea Tea Franić agreed that the presented cakes would be tasty for the children in the kindergarten and that they would like to include them in the menus.

After the training session, the competition segment followed: MasterChef. The cooks randomly drew a mandatory ingredient around which they had to create a healthy cake, while the remaining ingredients could be chosen freely. They had exactly 5 minutes to select the mandatory and additional ingredients, after which they dove straight into baking!

The first cake was ready after an hour and a half, during which the dishes were tasted and evaluated by the chef. Zoran Delić, Patricija Kreš, M.Sc. in Nutrition, and health coordinator Nikolina Sopić.. The cakes were evaluated in three categories: nutrition, gastronomy, and suitability for preparation in a kindergarten setting. Each category carried a maximum of 5 points, and the three cooks with the highest scores were declared the winners. Their cakes will be included in the menu of Sisak Novi Kindergarten.

The winning spot was claimed by Chef Darko Budakwith a carob pie. Second place was awarded to the oat flakes dessert, prepared by Chef Mina Hodžićand third place was claimed by Chef Snježana Đukićwith the snow cake.

The best chefs were awarded valuable prizes. sponsored by Electrolux.. The chefs won the Electrolux ESB2500 smoothie blender, which comes with two BPA-free plastic bottles that are resistant to impacts and drops.

All participants also received a certificate from the Healthy Meal Standard Academy. which were presented to them by master chef Zoran Delić and Patricija Kreš, M.Sc. in Nutrition.

Preparation description

For the shortcrust pastry: mix the flour, baking powder, vanilla sugar, and regular sugar. Grate the margarine and rub it into the flour mixture, then pour in 2 dl of warm water. Knead into a ball and let it rest for half an hour. 

1. Carob pie

  • Flour 5 cups
  • Baking powder 1 pack
  • Vanilla sugar 1 pack
  • Ground carob 200g
  • Sugar 1 cup (2dcl)
  • Margarine 500g
  • Milk 2 dcl

Place the ground carob into the milk and sweeten to taste. Divide the dough ball into two parts and roll them out. Place the first layer on a baking tray, spread the carob filling over it, and cover with the second layer. Poke holes with a fork and bake for 20 minutes at 180°C (356°F).

2. Oat flakes dessert

  • Eggs 3 pcs
  • Oat flakes 3 cups
  • Baking powder 1 pack
  • Milk 1 cup
  • Sugar 3 tbsp
  • Handful of coarse flour

    Glaze:

    • Dark chocolate 200g
    • Walnut 200g
    • Butter 150g

    Preparation description

    Beat the eggs, then add the oat flakes, baking powder, milk, sugar, and a little flour. Mix everything well and pour into a baking tray. Bake at 180°C (356°F) for about 20 minutes. While still warm, pour the glaze over the sponge: melted chocolate with added butter and walnuts.
